Checked my garden the other day and could not believe how much it grew in just 2 days. Didn't think I'd get much but everything is coming up. Have 3 huge zucchini plants. We are going to have zucs moving out out ears. Going to pick the kale tomorrow I think it regrows? Wish you were closer sue, I'd love to learn how to can.

The kale I had early I let go to seed...got these seed pods about 1.5" long, I let them on the plant to dry out some. Took them off the other week and got a ton of seeds from them..alot I'm sure will reseed.
My canning didn't do so hot last year, alot of my tomatos that I did didn't seal right..not sure why. If I have freezer space I might just freeze them this year..we'll see.
I am jaring pickles now..they are so freakin good!...even just a few days in the brine and they are awesome..I just do a cold pack and keep them in the fridge.

kale is healthful.
we have a lamb shank kale slow cooker dish that works very well, but it is not a summer dish.
as for the pickles, i am not familiar with cold, except when we buy "Van Holten's Sour Sis" pickles and save the liquid. slice onions or cukes and marinate them for a day or two in the fridge.
pretty good.

8C water 4C white vinegar 3/4C salt
Boil Cool
Keep in glass jar till you have enough pickles.
In a clean jar add pickle, dill, garlic, onion if you like, hot pepper flakes if you want a bit of spice cover with brine and store in fridge done!

So Garden is almost done, Still have broccoli, sweet potato's, cabbage & brussle sprouts in. Most everything else is done, a few green tomatos.
Picked a few pumpkins yesterday and cooked them down to freeze, also made a pumpkin/apple soup..I shouldn't have stuck all of the hot pepper in..has some kick!
Got apples from over at work and I don't know how many containers of those I have.....tired of peeling apples I know that.
Aleady looking forward to next years garden, I have a few things I want to do different. got ahold f some italian beans last year and wasn't sure how they would do...they were really good! but they grew really tall, I didn't have the right set up...next year I'll know better. Same with my stubby carrots..thought they would be ok in the rain gutter but that didn't really work out so well, have to figure something else out for next year too.
We didn't get a killing frost yet but it's coming soon, I have to get the rest of the garden cleaned up and ready for next year.
I did get in some shallots, onions and my garlic...probably 300-400..I do like my garlic!
Summer went fast and I didn't get done everything I wanted to..maybe next year.
Hope you guys did ok with your gardens.
