didn't know an answer to your question.
did a search.
very interesting articles about the qualities of each of the three.
it seems that each has its optimal uses.
nutrition was not mentioned except to say that it factors minimally, but that there are other reasons to choose among the three.
i let it get away, but if you can't find it, let me know and i'll redo the search.

That's ok..I was looking for nutritionallt all seem to be about the same calorie, basic make up, carb..I've been using cornstarch to thicken up chicken broth for stirfrys.. I knew arrowroot has a lower thickening temp. Mom always used instant tapioca in the bottom of juicy pies like blueberry to thicken up the juice.
