we had this the other day, and it is very good. a solid 8. slice and dice takes as long as cook, but the whole thing takes less than an hour from putting on the apron.
1/4 C olive oil 3 onions, finely diced. (i use sweet onions to save time. if yellow onions, be sure to cook them til sweet.) 4 cloves garlic, minced 2 celery ribs sliced thin 8 cups v stock or water. (better than bullion is pretty good.) 1.5 C fine diced canned tomatoes w juice. 2 biggish sweet potatoes, peeled, diced. 1 carrot, thin sliced 1/4 t nutmeg 2 T minced parsley (original recipe calls for cilantro) 1.5 t salt dash cayenne ground pepper 2 taste 5 C kale
saute onion, garlic, celery til soft. add all other ingredients except the kale bring to boil and reduce to simmer until sweet potatoes are tender. remove at least 2 C and puree and return to pot. add kale and cook until greens are tender.

That sounds pretty good fish, I'll have to try it. My problem is I'm the only one who eats this kind of stuff.

they'll like this.
that is to say, if anybody don't like this, i will be amazed.
this is just plain good.
a raging carnivore would drink this soup on the way to the carcass.
