Again!
So I've struggled with wraps for what seems like forever! So I was watching "Americas Test Kitchen" the other wek and they were going throough Tortilla presses...Thought to myself...self, you have one of those on a shelf. LOL Pam actually got me one years ago for Christmas or my B~Day..don't remember which...used it ok, shelved it. BUT...I broke it out, got some masa and gave corn tortillas a whirl again...still wasn't crazy about them..First one I pressed too hard and ended up with splattered corn chips. Did kinda get the hang of it but I want to stay away fom corn. Went home and gave a shot at wraps.
Buckwheat flour, Bread flour, salt, yeast, water....Wasn't too bad, dough was a little thick but they were very pliable.
Thinned the dough out nest time and I got me some pretty decent wraps!
Don't think I'm going to shelve my tortilla maker.
Did find that even though the surfaces are non stick you still need a touch of spray.
Made some with the buckwheat flour, touch of bread flour, touch of whole wheat and a bit of ground flax seeds...really good but as we all know...if the bread is in the house we eat it!
So this wasthe last one I did...still could tweek it a bit but it was pretty good.
1 1/2 C warm water
Tea yeast
pinch of sugar or honey
mix together set aside
1 C Buckwheat flour
1/2 C Whole Wheat flour
1/2 C Bread Flour
1/2 C Ground Flax Seeds
Pinch of salt
Stir all dry ingredients together
Add wet to dry and mix well, let stand at least 1/2 hour
I'm sure you ccould roll these but for 40 bucks buy a press! they litterally only take about 1 minute to cook on the press.
I may never buy wraps again!
I did let them cool all the way and dust each side with a bit of potato flour or corn starch so they don't stick together.
Looking forward to trying some flavored ones!
